Roast Plums and Cheesecake

Roast Plums and Cheesecake, from Eadie Manson

 


Method

Roast Plums Method:

Place sheet of tin foil A4 size on area in front. Place halved plums, stone removed on tin foil, scatter spices. Pour over stock syrup. Place another A4 sheet of tin foil on top and fold up to make parcel. Bake in oven at 200c for ten mins. Take out and split foil, put back in for approx 5 mins. 

 

Cheesecake Method:

Cream cheese and sugar in a bowl until sugar is dissolved. Beat in flavourings to taste remembering mix still has cream to add Lightly whip the cream to soft peaks. Fold both mixes together. Place in container and refrigerate.

 

Top with toasted oatmeal mix.

Roast Plums

3 Ripe Plums
1 Bay Leaf
8 Pink Peppercorns
2 Star Anise
½ Cinnamon Stick
60mls Stock Syrup

 

Cheesecake 

150gms Cream Cheese
15gms Caster Sugar
1-2drops Vanilla Essence
½ Lemon, zested
200mls Cream
