Pannacotta with Berry Compote

Main Ingredient(s): Cream, Blackberry, Blueberries

A delicious pannacota recipe from Eadie Manson.



Pannacotta Method:

Place gelatine leaf in some cold water. Place cream, sugar and extract into a pot and bring to the boil. Squeeze excess moisture out of the gelatine and add to the cream.  Stir to dissolve. Strain the mixture into a bowl and sit the bowl in an ice bath to chill mixture and suspends vanilla seeds. Once the mixture sets around the sides pour into moulds and place in the fridge to set.


Berry Compote Method:

Slice the strawberries and place in a metal bowl with the peppercorns, sugar and lemon zest. Steam over a pot of simmering water for approx. 30 mins. Remove and allow to drip through a sieve. Combine with the other berries, halving some of the berries if they are too large.


Cream Method:

Place all the ingredients in a bowl except the pepper and whip to soft peaks. With a hot spoon roche the cream and crack some pepper on the top.




250mls  Cream
1 ½ leafs Gelatine
40gms  Sugar
Vanilla Extract

Berry Compote
½ punnet Strawberries
25gms  Blueberries
25gms Blackberries
1 tbsp Caster Sugar
1 tbsp Pink Peppercorns
Lemon Zest Peel

150mls Cream
1 tbsp Icing Sugar
½ Lemon, zested
Crack of Black Pepper
